Maximus’ Apple A Day Quinoa

The castle guards know that an apple a day keeps Maximus happy.

This sweet breakfast quinoa is packed full of fibre, milk and fruit. The perfect start to the day.

What You'll Need
  • 200g quinoa, rinsed and drained
  • 450ml milk, or non-dairy milk
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 tbsp brown sugar
  • 1 apple, cored and diced into 1cm cubes
How to Make It
  1. Combine quinoa, milk, vanilla, cinnamon and brown sugar in a large saucepan.

  2. Bring to a boil over a medium heat, stirring frequently to keep the milk from burning.

  3. When it starts to boil, immediately reduce the heat to low and cover.

  4. Simmer for 15-20 minutes until the quinoa has absorbed most of the liquid.

  5. Stir in chopped apple and divide between 4 bowls.

  6. Serve warm.
