Pirates like Jake need healthy snacks to keep them tip top whilst sailing the seven seas!

This pirate treasure is packed full of healthy crisp veggies and your kids will love it. The perfect snack for movie night.

What You'll Need
  • 1 bunch of kale, rinsed and dried
  • 1 red beetroot, sliced thin
  • 1 golden beetroot, sliced thin
  • 400g popped, popcorn (plain)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1/2 tbsp brown sugar
  • 1/2 tbsp garlic powder
  • 1/2 tsp chilli powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
How to Make It
  1. Preheat oven to 180c / 160f

  2. Remove kale leaves from steam and tear into strips.

  3. Toss kale with 1/2 tbsp of olive oil, lay on baking sheet and sprinkle with a pinch of sea salt.

  4. Bake the kale in the oven for 8-12 minutes or until crispy.

  5. Place the sliced red beetroot in a bowl and toss with 1/2 tbsp of olive oil and pinch of sea salt.

  6. Lay the beetroot evenly on a baking tray and then cover with another baking tray. This will help the beetroot crisp up in the oven.

  7. For the golden beetroot, repeat the same steps in a seprate bowl and baking sheet so the colours don't bleed.

  8. Bake the beetroot chips for 15-20 minutes or until crispy. Remove the top baking sheet and allow to cool.

  9. For a homemade BBQ seasoning, in a small bowl mix together the paprika, onion powder, brown sugar, garlic powder, chilli powder, pepper and the remaining salt. Place the popcorn in a large bowl and toss with 1 1/2 tbsp of olive oil. Then sprinkle the BBQ seasoning and toss again to coat.

  10. Add your baked kale and beetroot chips to the coated popcorn and toss again. Enjoy!
