Boo’s Berry Burst Pancakes
Your little monsters will love these healthy pancakes with a twist.
Made with wholewheat flour and fat-free milk, they’re the perfect healthy breakfast.
- 1 tbsp unsalted butter
- 3 egg whites, room temp
- 180ml milk, room temp
- 70g wholewheat flour
- 1/2 tsp vanilla essence
- 1 tsp grated orange zest
- Pinch of salt
- 2 tbsp sugar free, 100% fruit jam

Preheat oven to 250c/230f.

Whilst pan is heating in the oven, make the batter.

Combine egg whites, milk, flour, vanilla, zest and salt in a blender.

Combine until smooth and no lumps of flour remain. Carefully pull the frying pan out of the oven using an oven glove.

Swirl the butter so that it coats the sides and bottom of the pan.

The jam will sink into the batter. Bake at 250c/230f for 13-15 mins.

The batter should be puffed up, and the jam bubbling. A knife or tooth pick inserted into the centre of the pancake will come out clean.

Slide the pancake from the pan onto a board and cut into 6 wedges.

Serve with fresh fruit.
